Whether you're a seasoned cook or just starting out, this recipe is a great option. The beef and potatoes turn out tender and flavorful, making it an ideal choice for when you have guests coming over and want to wow them with a homemade meal. The best part? This recipe is lightning-fast, and you'll have it ready in under 40 minutes. Simply serve it with a side of white rice and a fresh salad, and you're good to go.
One of the perks of this recipe is its versatility. Depending on the number of people you're serving, you can easily adjust the quantity of ingredients. This recipe makes enough for 6 people, but you can easily halve or double the recipe to suit your needs. And if you're not planning to use it all immediately, don't worry – you can freeze the beef for up to 3 months. Just be sure to keep the potatoes separate to preserve their texture.
Follow the steps with care and attention
In a pressure cooker, heat some olive oil and sauté the beef with minced garlic and salt to taste.
Then cover the beef with water and bring to a boil.
After reaching pressure, count 25 minutes, turn off the heat, and let the pressure release on its own.
Meanwhile, cut the potatoes into cubes and cook them in a separate pot until they're tender. Set aside.
In a blender, blend the tomatoes with parsley and onion to make a sauce. Set aside.
When the pressure has released from the pressure cooker, remove the lid and pour in the tomato sauce.
Stir and adjust the seasoning.
Add the green olives and cooked potatoes to the pressure cooker with the beef and sauce. Mix well and cover the pot.
Bring to a boil and cook for an additional 10 minutes under pressure.
Then turn off the heat and let the pressure release on its own.
Serve immediately.
