Preparing Australian Onion

Cut the onions from the top, then slice them like a pie.

It will be divided into wedges and open up.

Cut each slice into three pieces.

In a bowl, make a brine with cold water, salt, and vinegar.

Place the onions and let them soak in the refrigerator for about 2 hours.

Remove the onions from the brine, place them upside down in another bowl to drain excess water.

Then, put them back in the refrigerator and let them sit for another hour.

Meanwhile, blend the milk, eggs, and grated cheese in a blender.

Place in a bowl and add the seasonings.

Next, dip the onion in this mixture, remove excess, and coat with flour and cornstarch.

Remove excess flour, giving a few light taps.

Fry in hot oil.
