Since I didn't have a recipe for this, I reached out to someone who knows their stuff - my aunt, who sells quentão at the kerme every year and is a huge success. She kindly shared with me the step-by-step process for making a delicious non-alcoholic quentão using ginger and cinnamon. The flavor is unmistakably quentão, but without the alcohol. Now, everyone can enjoy quentão, from kids to those who prefer not to drink alcohol. This is a great option for anyone planning a family-friendly Junina celebration and wanting to please everyone. You can make this non-alcoholic version, and if you prefer, you can also use another recipe I've shared here that includes alcohol. I hope you enjoy making and sharing this quentão at home!
Follow the steps with care and attention
In a pot, place all the sugar and heat over low heat.
Stir until it dissolves slightly and forms sugar pellets.
TIP: Don't let it cook too long, or the quentão will be too bitter.
Next, add the cloves, cinnamon stick, and sliced or minced ginger.
TIP: The more ginger you add, the stronger the flavor will be.
Mix everything well.
Stir until the sugar dissolves completely and forms a caramel syrup.
Then, add the water gradually and stir constantly.
TIP: Be careful during this step and stir constantly.
At this point, the sugar will be very sticky.
Cover the pot and let it cook, stirring occasionally, until it starts to boil.
TIP: If you prefer it sweeter, you can add more sugar at this stage.
That's it! Serve the caipira quentão.
